Tiramisu
Ingredients:
8 eggs separated
pinch of salt
1/3 cup of sugar
1 pound of marsacapone
1 cup on heavy cream
2 cups of espresso coffee
2/3 cup of marsala
30 lady fingers
1 cup of cocoa sifted with 2 tablespoons of icing sugar
Directions:
1. Beat the egg yolks with the sugar over a hot water bath until thick pale and creamy.
2. Add the marsacapone to the yolk mixture a bit at a time and mix until smooth.
3. In a separate bowl beat the cream until stiff peaks form
4. In another separate bowl beat the egg whites with a pinch of salt until stiff peaks form.
5. Fold the whip cream into the egg yolk and marsacapone mixture in two additions until smooth
6. Fold the egg whites into the mixture in two additions until smooth. Set aside.
7. Dip the lady fingers into the espresso mixture and make a layer in the bottom of a 9 x 13 glass pan.
8. Cover with half of the cheese mixture.
9. Add a second layer of coffee dipped lady fingers.
10. Add the other half of the cheese mixture and smooth until flat.
11. Sift the cocoa mixture over the top surface.
12. Chill for a least 2 hours to set
