Fried Rice
Ingredients:
1 cup cooked white rice
2 cups water
2 Tbsp chopped onion (macedoine)
1/3 cup diced carrots (brunoise)
1/4 cup diced celery
2 tablespoons vegetable oil
1 egg
soy sauce to taste
sesame oil, to taste (optional)
Directions:
1. In a small saucepan, boil carrots in water about 3 to 5 minutes. Drop peas into boiling water, and drain.
2. Heat wok (or frying pan) over high heat. Pour in oil, sauté onions until clear. Stir in carrots and peas; cook about 30 seconds.
3. Crack in eggs, stirring quickly to scramble eggs with vegetables.
4. Stir in cooked rice. Continue to cook until heated through. Shake in soy sauce, and toss rice to coat.
6. Drizzle with sesame oil, and toss again.
