Melting Moments
Ingredients:
Cookies:
4 cups salted butter (room temperature)
6 tablespoons icing sugar
4 tablespoons vanilla
8 cups of all purpose flour
Icing:
1 lb. of salted butter (room temperature)
1 kg. bag of icing sugar
2-3 tablespoons half and half cream
1 teaspoon vanilla
Instructions:
Cookies:
1. Cream the butter, icing sugar, and vanilla with a beater until light and creamy.
2. Add flour and stir into the butter mixture until it forms a ball.
3. Wrap the dough and refrigerate for about 15 minutes.
4. Roll the dough between two sheets of waxed paper until 1/4 inch thick and cut with a small round cutter.
5. Bake until just done in a 350F oven - about 10-12 minutes.
6. Cool
Icing:
1. Beat the softened butter with the vanilla until light and fluffy.
2. Gradually beat in the icing sugar until it is incorporated, adding the cream when needed.
3. At this point you may add food colouring to the icing if you wish. (Red and green for Xmas)
4. Ice one cookie and top with a second cookie.
