Lemon Tea Loaf
1 cup sugar
1/2 cup soft butter
1 egg
2 Tbsp yogurt or sour cream
1/2 cup milk
1 1/2 cups flour
1 tsp baking powder
grated rind of one lemon
Glaze Ingredients:
Juice of one lemon
1/4 cup sugar
Directions:
Glaze:
In a small bowl, combine the lemon juice and sugar and pour overtop of the warm loaf. Remove loaf from pan and cool on a baking rack before cutting.

- Grease one loaf pan. In a large bowl, cream together sugar and butter.
- Beat in egg and yogurt, then beat in the milk.
- Mix the flour and baking powder;beat into the egg mixture until blended. Stir in the lemon rind.
- Spoon into prepared pan. Bake at 350 degrees for one hour or until a toothpick inserted into the centre of the loaf comes out clean.
- Let the loaf stand for 5 minutes.
