Extra Creamy Mac and Cheese
14 ounces macaroni
1/4 cup butter
4 tablespoons all-purpose flour
2 1/2 cups milk
1 (8 ounce) package cream cheese
1/2 teaspoon salt
1/2 teaspoon black pepper
2 teaspoons Dijon mustard
2 cups shredded Cheddar cheese
1 cup dry bread crumbs
2 tablespoons butter
2 tablespoons chopped fresh parsley
1/2 cup cheddar cheese (for topping)
Directions
1. Bring a large pot of salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain and cool.
2. In a 3 quart saucepan over medium heat, melt butter and stir in flour. Cook for about 1 minute, until smooth and bubbly; stirring occasionally. Mix in milk, salt, pepper, and Dijon mustard. Continue cooking until sauce is thickened. Turn off heat and stir in cream cheese and grated cheese.
3. Add cooked macaroni and Cheddar cheese. Mix well.
4. Pour into 2 casserole dish.
5. In small bowl mix together bread crumbs, butter additional cheddar cheese and parsley; crumble over cooled macaroni and cheese.
6. Bake in 350 degree oven for 40 minutes or unitl golden brown and bubbly. Enjoy!
