Cream Cheese Brownies
Ingredients:
16 oz cream cheese
4 eggs
2 cup granulated sugar
1 cup flour
2 cups maraschino cherries well drained and chopped
6 eggs
3 cups sugar
2 1/4 cups flour
1 1/2 cups chopped walnuts
¼ tsp salt
¾ cup cocoa
1 ½ cups butter or margarine
Icing
2 2/3 cup icing sugar
2/3 cup cocoa
1/3 cup butter or margarine
3 Tbsp hot water or coffee
Method:
Cream cheese layer: Beat the cheese and 2 eggs well. Blend the sugar and flour in gradually, beating until well blended. Stir in the cherries. Set aside.
Brownie layer: Beat four eggs until frothy. Add the next four ingredients. Melt and stir cocoa and butter. Add to the second egg mixture. Stir well. Spread 2/3 of this mixture into the bottom of two 9x13 inch pans and reserve the remaining 1/3 for the top layer. Carefully spread the cream cheese filling over the bottom mixture. Cover as completely as you can with the remaining brownie mixture.
Bake in a 350 degree oven for 30-35 minutes. Cool and ice before cutting into 48 pieces.
