Lemon Cranberry Coconut Muffins Yield 2 dozen
4 cups flour
1 cup sweetened coconut (preferable flaked)
1 cup rapid cook oats
2 1/2 Tbsp baking powder
2/3 cup butter
1 1/2 cups sugar
4 eggs
4 Tbsp lemon zest
1/2 cups milk
1 cup cranberry sauce
Topping
1/3 cup sweetened flaked coconut
Glaze
1 cup sugar
1/2 cup lemon juice
1/3 cup water
2 Tbsp lemon zest
Directions:
1. In a medium bowl, combine the first four ingredients. Stir and set aside.
2. Cream together butter and sugar until light and fluffy. Make sure to scrape down the sides of your bowl. Add eggs and lemon zest.
3. Add the flour mix alternately with the milk until all ingredients are combined. DO NOT OVERMIX!
4. Swirl in cranberry sauce.
5. Using a portion scoop, fill greased, lined muffin tins.
6. Sprinkle with the remaining coconut.
7. Bake at 375 degrees for 18-20 minutes
In a saucepan, combine the glaze ingredients. Heat on medium until boiling.
Reduce heat to low and stir until slightly thickened-about 4 minutes.
Spoon glaze over hot muffins. Allow to stand for 5 minutes before removing from pan.
