Whoopie Pies
Yield 1 ½ dozen
1 cup softened butter
½ cups sugar
2 tsp vanilla
2 eggs
4 cups flour
¾ cup cocoa powder
½ tsp salt
2 tsp baking soda
1 cup water
1 cup buttermilk
Filling
2 cups marshmallow cream
2 cups icing sugar
½ cup softened butter
2 tsp vanilla extract
Method
Preheat oven to 375 degrees F
Sift together flour, cocoa, salt and soda. Set aside.
In a mixing bowl, cream together the butter and sugar until fluffy. Add the vanilla and eggs and blend until well mixed.
Add the dry ingredients and buttermilk/water mixture alternately to the creamed mixed until combined.
Drop dough by small portion scoop onto a parchment lined pan. Bake for 5-7 minutes or until done.
Cool Completely.
In a small bowl, beat the filling ingredients together until smooth. Spread filling onto the bottom of one cookie and sandwich together with the bottom of another cookie.
