Chicken Parmigiana
Ingredients:
2 eggs, beaten
3 Tbsp flour
salt and pepper to taste
4 oz dry bread crumbs
6 skinless, boneless chicken breast halves
1/2 cup tomato sauce
4 oz shredded mozzarella cheese
1/3 cup grated Parmesan cheese
Directions:
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking sheet.
In a shallow bowl, combine flour, salt and pepper. Set aside. Pour egg into a small shallow bowl. Place bread crumbs and half of the parmesan cheese in a separate shallow bowl. Dip chicken into flour, egg, then into the bread crumbs.
Heat olive oil in pan over medium heat. Fry chicken on both sides until slightly brown. Place coated chicken on the prepared baking sheet and bake in the preheated oven for an additional 30 minutes, or until no longer pink and juices run clear.
Remove chicken from the oven. Top with tomato sauce and shredded mozzarella cheese. Sprinkle with remaining Parmesan cheeses return to the preheated oven for 10 minutes or until melted and golden brown.
