Cinnamon Buns
Dough
2 cups warm milk
4 eggs, beaten
1/2 cup butter melted
4 cups all purpose flour
1 tsp salt
1/2 cup white sugar
11/2 Tbsp yeast
For the Filling, mix together
1 1/2 tbsp cinnamon
1/2 cup brown sugar
1/4 cup white sugar
Set Aside
1/2 cup butter, melted
Method
Stir together warm milk, butter, sugar and yeast. Set aside for 10 minutes.
In a large bowl combine flour and salt.
Mix the eggs with the yeast mixture.
Pour the egg mixture into the flour mixture. Mix with a wooden spoon until it begins to form a ball. Remove the dough to the worktable and continue to mix until the dough begins to incorporate the remaining flour. Divide the dough into two pieces. Roll each dough into a rectangular shape. Spread the melted butter over the entire surface, sprinkle the cinnamon sugar and roll into a log. Cut each dough into 10 equal pieces. Grease a 2 inch hotel pan. Place buns into pan. Cover loosely in plastic and allow to rise at room temperature .
Bake at 350 degrees for about 20-30 minutes or until golden brown.
Cool.
Cover with icing made with 1/2 cup icing sugar and 2 Tbsp milk.
