Tomato Basil Parmesan Soup
Ingredients:
1Tbsp butter
1 lg. carrot, peeled & grated
2 lg. ripe tomatoes, peeled, seeded & chopped
1- can diced tomatoes
1Tbsp basil
1/2 lg. onion, sliced
1/2 tsp. sugar
1/4 tsp. ground white pepper
3 c. vegetable or chicken broth
1/2 cup parmesan cheese
Directions:
In a rondeaulin, melt butter over medium heat.
Add onion and carrot and cook until onion is transparent, stirring frequently.
Stir in tomatoes, basil, sugar and pepper. Heat to boiling, stirring constantly.
Reduce heat and simmer, covered for 10 minutes. Cool slightly.
With an immersion blender, puree until smooth. Stir in broth and salt. Heat until steaming.
Stir in Parmesan cheese.
