Double Chocolate Zucchini Muffins Yield: 1 dozen jumbo muffins
Preheat oven to 350 degrees
Ingredients:
Dry:
2 1/3 cup all purpose flour
1 ¼ cup sugar
1/3 cup unsweetened cocoa
2 tsp baking powder
1 tsp ground cinnamon
1 tsp baking soda
Liquid:
1 cup sour cream
½ cup vegetable oil
2 eggs, beaten
¼ cup milk
Other:
1 cup chocolate chips
1 cup shredded zucchini
Method:
1. Combine the flour, sugar, cocoa, baking powder, cinnamon, baking soda and salt in a bowl.
2. In a large bowl combine the sour cream,, eggs, oil and milk and whisk together until well blended.
3. Add the zucchini and chocolate chips to the liquid ingredients.
4. Stir in the flour mixture just until moistened. Do not over mix!
5. Scoop the mixture evenly into a well sprayed muffin pan.
