New York Cheesecake
Ingredients:
Crust
2 cups graham or shortbread crumbs
1/2 cup melted butter
2 Tbsp sugar
Method:
Combine the above ingredients. Press into a greased springform pan. Bake at 350 degrees for ten minutes. Remove from oven. Cool.
Filling
3- 8oz packages of cream cheese
1 cup of sugar
1 cup of sour cream
4 eggs
add your favourite flavour - vanilla, lemon or orange zest etc.
Directions:
1. Preheat the oven to 325F and put a roasting pan half full of water in the oven.
3. Place the cream cheese in a large bowl and beat with the sugar until smooth.
4. Add the eggs one at a time and beat.
5. Add the vanilla and the sour cream and beat just until smooth.
6. Put the mixture into the springform pan. Place cheesecake into the water bath.
7. Bake approximately 40 minutes or until firm.
8. Serve with your favourite fruit, chocolate or butterscotch sauce and freshly whipped cream. Toasted pecans are also a nice addition.
