Basic Egg Salad
Ingredients:
6 hard cooked eggs, peeled and coarsely chopped or grated
2 Tbsp regular or light mayonnaise
¼ cup chopped green onions
¼ cup celery, finely chopped
2 tsp Dijon mustard or to taste
½ tsp each salt and white pepper
Directions:
1. Grate the eggs coarsely.
2. Place the eggs, green onions and celery in a large mixing bowl. Mix to combine.
3. In a small bowl mix together the mayonnaise, mustard and salt and pepper until well blended.
4. Add the mayonnaise mixture to the egg mixture and stir until all of the ingredients are combined.
