Blueberry Muffins
Ingredients:
6 cups flour
3 cups sugar
1 tsp salt
2 Tbsp plus 1 tsp baking powder
1 1/3 cup vegetable oil
4 eggs
milk (to equal 4 cups-read recipe)
4 cups blueberries

Directions
- Preheat oven to 375. Line and grease 4 muffin pans.
- Combine flour, sugar, salt and baking powder. Place oil and eggs into a one litre container. Fill with milk.
- Pour into flour mixture and blend just to moistened. Add blueberries.
- Fill muffin cups using the portion scoop. Sprinkle with crumble.
- Bake for approximately 25 minutes or until muffins are golden and spring back to the touch.
