Fast Tomato Sauce
Ingredients:
28oz of tomatoes, crushed
1 Tbsp of olive oil
1 small onion diced
1 clove of fresh garlic minced
1/4 tsp of salt
1/4 tsp of pepper
1/3 green pepper small diced
1/4 red pepper small dice
3 stalks celery-diced
1/2 tsp dried basil
1/2 tsp dried oregano
1/2 tsp of dried parsley
1/4 tsp of sugar
Directions:
1. In a large pot, sauté garlic, onions and celery, green pepper in the olive oil on medium heat.
2. Add the dried herbs, salt and pepper.
3. Sweat the vegetables stirring constantly for about 8 minutes.
4. Add the tomato sauce, water and sugar and simmer until thick. (about 30-40 minutes)
5. Place in small containers to cool and refrigerate or freeze. This sauce is best made the day before as the flavour will have time to develop.
