Greek Lentil Soup
Ingredients:
1 cup diced onion
1 cup celery
1 cup diced carrot
1 tbsp minced garlic
¼ stick cinnamon
1 bay leaf
2 tsp oregano
2 tsp dill
4 cups vegetable stock
1-28 oz can of diced tomatoes
2 Tbsp of tomato paste
½ cup of green lentils
½ tsp salt
1/8 tsp pepper
1 Tbsp olive oil
Instructions:
1. Heat a large pot and add the oil.
2. Add the carrots, onion, celery, oregano, dill, garlic salt and pepper and sweat on medium heat until the vegetables are soft.
3. Add the remaining ingredients and cook until the lentils are soft. (about 1 hour)
