Apple Custard Cake
Ingredients:
12-14 medium sized apples peeled and sliced
cinnamon
1/4 lb of butter melted
2 cups of flour
1 cup of sugar
2 eggs whisked together
2 teaspoons of baking powder
Custard
1 cup of sugar
1/4 lb of butter melted
2 eggs
Directions:
1. Peel, core, and slice the apples - set aside.
2. Make the pastry- mix together in a bowl the flour, sugar and baking powder.
3. Add the eggs and stir with a fork to combine. Use fingertips to make sure egg is evenly distributed.
4. Add the melted butter and pull together to form a ball.
5. Place the dough in a buttered 10 inch springform and press onto the bottom and sides of the pan.
6. Sprinkle the pastry lightly with cinnamon. Chill for at least 20 minutes.
7. Add the apples in 3 layers sprinkling each layer with cinnamon.
8. Place the cake in the oven and bake for 1 hour.
9. Make the custard at this point by melting the butter, adding the sugar and whisking in the eggs. Cook gently until opaque. Do not boil.
10. Pour the custard over the cake and continue to bake for ½ hour. Remove from the oven and let sit to cool. Run an knife around the edge to loosen crust.
11. Cake should be cooled before cutting.
