Handling Knives with Care and Caution
Knives are an essential kitchen tool- but they can be dangerous and are expensive. They MUST be treated with respect, care and caution.
Please observe the following guidelines for using knives:
Ø If you drop a knife, let it fall- never try to catch a falling knife!!!
Ø Always carry a knife at you side with the tip pointing downward
Ø Always use a cutting board
Ø Never cut food in the palm of your hand
Ø Do not gesture or point a knife at anyone or anything.
Ø Cut away from your body.
Ø Place your knife on top of your cutting board if you must leave your station.
Ø Never place a knife in a sink full of water.
Ø Always use the correct knife for the task you are doing.
Ø Keep knives sharp. Dull knives are dangerous and should not be used.
Ø Use the Claw and Handshake while cutting (if you don’t know what I mean, then ask!)
Ø Never run or turn around quickly with a knife in your hand.
Ø Do not use knives for purposes other than cutting (as a bottle opener etc)
Ø Never stab the tip of your knife into the cutting board.
