Orange Sponge Cake
Ingredients:
1/2 cup sugar
4 eggs separated
1 Tbsp orange rind, grated
1/2 cup orange juice
1 cup all purpose flour
1 tsp baking powder
Pinch of salt
Directions:
1. Sift together flour and baking powder.
2. Place egg whites in a clean metal bowl with a pinch of salt and beat into stiff peaks.
3. In a separate metal bowl, beat the egg yolks with sugar until very thick and lemon coloured .
4. Add the orange juice, zest and dry ingredients to the yolk mixture and mix well.
5. Gently fold in the egg whites into two additions.
6. Pour into a pan lined with parchement paper until 2/3 full.
7. Bake at 350 for approximately 30-40 minutes.
*cake should be firm to the touch in the middle when done
Simple Syrup:
1 cup sugar
½ cup of orange juice
*place in a pot and bring to a boil. Reduce heat and simmer 2-3 minutes. Cool to room temperature and brush on cooled cake.
