Lemon Bars
Ingredients:
Crust:
1 cup of butter
2 cups of flour
3/4 cup confectioners sugar
Topping:
6 eggs
3 cups sugar
6 tablespoons flour
1/4 cup plus 2 tablespoons of lemon juice
1 tablespoon finely grated lemon peel
Method:
1. Preheat oven to 325F
2. Blend the 3 cups of flour, icing sugar and butter until coarse crumbs.
3. Press into a 9x13 pan.
4. Bake 18-20 minutes.
5. In a medium size bowl combine the topping ingredients.
6. Pour the topping over the par baked crust.
7. Return to the oven and bake for and additional 20 minutes.
