Bruschetta
Ingredients
1 Tbsp Olive Oil
2 Roma Tomatoes
1/2 Clove Garlic Chopped
1/3 medium onion diced
1/2 Tbsp Vinegar
1/2 Tsp Lemon juice
Salt
3 Fresh Basil Leaves -- Chopped
1/4 French bread loaf
1/4 cup of shredded mozzarella cheese or 2 Tbsp parmesan cheese
Directions
1. Cut the bread into nice 1/4 inch slices. Brush lightly with garlic butter. Set aside.
2. Diced the tomatoes and put them into a bowl.
3. Add the onion, tomatoes, basil, vinegar, Olive oil and lemon juice. Mix well.
4. Broil the bread lightly (this can be done when the Bruschetta has been made, so the bread does not get cold).
Once it has begun to brown, remove from the oven.
5. Spoon the tomato mixture onto the bread and sprinkle with either parmesan cheese or mozzarella cheese. Broil for a second time. Serve warm.
