Basic Pancakes
Ingredients:
1 cup flour
2 tablespoons sugar
2 teaspoons of baking powder
2 eggs lightly beaten
3/4 cup of milk
2 tablespoons of melted butter
Instructions:
Preheat griddle to moderate heat.
Sift together flour, salt, sugar and baking powder.
Stir to combine
Combine egg, milk and melted butter and slowly stir into dry ingredients.
Mix only until dampened - batter should be lumpy.
When a drop of water will dance on the griddle, begin cooking the pancakes using about 3 tablespoons of batter for each pancake.
Cook until bubbles form on the surface, turn gently and brown flip side.
Serve as soon as possible with butter, maple syrup, sliced fruit, or ice cream with dessert sauce.
You can add your favourite diced fruit, berries, nuts or seeds, or chocolate chips and use a variety of toppings for your pancakes
