Pico De Gallo
(Prepare the day before eating to develop the flavours)
Ingredients:
1 cup finely chopped red onion
1 jalapeno pepper-seeded and finely chopped
2 limes juiced
2 ½ cups roma tomatoes
½ cup chopped fresh cilantro
1 tsp salt
Directions
Mix red onion, jalapeno and lime juice in a bowl.
Let stand 10 minutes. Mix in Roma Tomatoes, cilantro and salt.
Let stand overnight in 1 litre, labeled containers.
