Sausage Pepperonata
Ingredients:
1/2 package penne or rotini cooked
1/2 recipe fast tomato sauce
2 peppers cut into medium sized chunks
2 carrots sliced into 1/2 rounds
2 stalks celery sliced
1/2 large onion sliced
1/2 head broccoli cut into florets
1/2 Tbsp Italian seasoning
1/2 package italian sausage-cooked and sliced
Directions:
Bake Sausage in a 350 degree oven until done- about 40 minutes
(internal temp should reach 165F)
Cook pasta to the al dente stage (ask of you are not sure what this means)
Cut all vegetables. Blanch each vegetable individually in a pot of boiling salted water for about 1 minute. Drain and set aside
When sausage is cooked, remove from oven and slice into small bite size pieces. Set aside.
In large rondeau, heat 1 Tbsp olive oil over high heat. Add vegetables and sauté for 2 minutes. Add sausage and Italian seasoning, and cook for an additional 2 minutes. Pour in tomato sauce and heat until boiling. Stir in Pasta.
Transfer pasta to a greased casserole dish. Cover with sprinkled cheese.
Preheat oven to 350 degrees. Bake for 15 minutes until cheese has melted and begun to brown.
Remove from oven and cover with foil.
Return to oven and continue to bake for an additional 45 minutes or until hot and bubbly.
