Barbecued Pulled Pork
1 - 3 lb. Pork loin (1.36kg)
BBQ Rub
1/8 cup brown sugar lightly packed
1 tablespoons cracked black pepper
1/8 cup paprika
1/2 tablespoon garlic powder
1/2 tablespoon onion powder
1 teaspoons coriander powder
1/2 tablespoon dry mustard powder
1/2 tablespoon coarse salt
1/2 tablespoon ground cayenne
BBQ Rub Directions
Combine rub ingredients in a small bowl, mix until all ingredients are evenly combined. Place pork on a tray and rub the mixture into the flesh using slight pressure to tear little pockets of flavour in the meat. Place rubbed pork in a large sealable bag. Marinate in the refrigerator overnight.
BBQ Mop
3/4 cup ketchup
1/2 cup apple cider vinegar
1/4 cup fresh apple cider
1/4 cup lightly packed brown sugar
1 tablespoons Worcestershire sauce
2 teaspoons paprika
2 teaspoons dry mustard powder
1/2 teaspoon cayenne
1/2 teaspoon salt
BBQ Mop Directions:
Combine all ingredients in a medium bowl and whisk until evenly combined. Reserve 1/3 cup (187ml) of the mop to pour over the pulled pork when finished cooking. Pour the remainder of the Mop over the Pork loin that has been placed in the slowcooker. Cover and cook on high for 6 hours.
Dipping Sauce 1/2 cup ketchup
1 cup tomato sauce
1 1/2 cans whole chipotle peppers diced
1/2 tablespoon Worcestershire sauce
1/2 tablespoon molasses
1 tablespoons apple cider vinegar
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon dry mustard
1/2 teaspoon paprika
1/2 teaspoon chili powder
1/2 teaspoon dried thyme
Finishing Directions:
Remove the pork from the crockpot and loosely cover with foil. Let rest for 30 minutes. Using your hands (rubber gloves recommended) or a fork pull at the pork meat. It will come off in threads. Serve pulled pork with reserved barbeque mop sauce and dipping sauce on soft rolls.
