Chocolate Macaroons
Yield:34 servings
2 cups sugar
6 Tbsp cocoa
½ cup butter
½ cup milk
½ tsp vanilla
1 cup shredded coconut
3 cups instant oats
Method
Combine sugar, milk, cocoa, butter and milk in a heavy bottomed saucepan. Bring to a boil and immediately remove from the heat-DO NOT OVERCOOK! Stir in the coconut and oats and mix well. Spoon teaspoonful onto parchment paper and chill in refrigerator until set.
