Ontario and Quebec are the two largest corn producing provinces, harvesting more than 350 million bushels annually. The outer layer of corn is called the husk.

Types of Corn
1) SWEET CORN This is the most familiar type of corn to most of us. We consume this as, CORN ON THE COB, FROZEN CORN AND CANNED CORN.
2) DENT CORN Also known as field corn, dent corn makes up more than 90% of the worlds corn crop. Field corn is used to make thousands of food products, ethanol- a gasoline additive, industrial products, fabric, paper and more!
3) POPCORN contains water that is stored in a small circle of starch. Whenever the kernel is heated, the water also heats and builds up pressure. This pressure causes the kernel to turn inside out, creating the popcorn we know and love!
Corn Refining Process There are two refining processes.
Dry Milling Process- The dry kernels of corn are ground together, This is the process used to make ethanol.
Wet Milling Process- The kernels are soaked (steeped) and separated into four components- starch, fibre, gluten and germ.
Corn is refined further to produce the following products.
1) Corn Starches - there are two categories of starch refined from corn- industrial and food. Industrial starches are used in the paper, chemical and plastic industries. Food grade starches are used as thickening and gelling agents in products such as pie fillings and soups.
2) Corn Sweeteners- , High Fructose, glucose and dextrose are all sweeteners made from corn. High fructose and glucose are used to sweeten beverages, baked goods, canned foods, ice cream and candy. Dextrose is used for its light sweetness, texture, bulking and colour in a variety of food and candy products. It is also used for making solutions for intravenous injections.
3) Corn Oil - is used extensively for cooking and is the main ingredient in margarine, salad dressing and mayonnaise. It is also used in pharmaceutical, animal feed and industrial products.
Feed Products - Used in dairy, poultry and pet foods, feed products form the basic protein source and provide a nutritionally well balanced diet.
