Beef Stew with Cumin Seeds
Ingredients:
1 cup flour
1 Tbsp dried thyme
1 tsp salt
½ tsp fresh ground pepper
3 lbs stewing beef cut into 1 inch cubes
¼ cup olive oil
1 cup of dry red wine
1 ½ cups of beef stock
1 cup crushed canned tomatoes
2 Tbsp of cumin seeds
1 tsp chilli powder
1 bay leaf
1 medium sized onion thinly sliced lengthwise
6 cloves garlic minced
½ cup chopped Italian parsley
Directions:
1. Preheat oven to 350F
2. Stir in the thyme, flour, 1 tsp salt and ½ tsp fresh ground pepper.
3. Turn the cubes of meat in the flour to coat, shake off the excess, and transfer to a plate.
4. Heat the olive oil in a heavy bottom pot and brown the onion and beef well on all sides.
5. When all the beef is browned remove and set aside. Discard the oil.
6. Add the red wine, beef stock, and tomatoes and set over medium heat.
7. Bring to a boil and stir, scraping the brown bits from the side of the pan.
8. Return the beef cubes to the kettle and add the minced garlic, cumin seed, chilli powder, and season to taste with salt and pepper.
9. Cover the pot and place on the middle rack of the oven.
10. Bake for 1 ½ to 2 hours stirring occasionally. Keep at a steady simmer.
11. Stir in chopped parsley just before serving.
