Hunan Style Pork
Ingredients:
1 pound boneless pork loin, cut into thin slices
4 tablespoon cornstarch - divided use
6 tablespoons soy sauce - divided use
2 cloves garlic, minced
1/2 teaspoon crushed red pepper flakes
1 teaspoon sugar2 pounds fresh broccoli, trimmed
4 tablespoons vegetable oil - divided use
2 tablespoon slivered fresh ginger root
2 onions, chunked and separated
1 pt cherry tomatoes, halved
4 cups fried rice
Directions:
1 pound boneless pork loin, cut into thin slices

Directions:
- Coat pork strips with mixture of 1/2 of each cornstarch and soy sauce as well as the sugar and garlic. Store in a plastic bag overnight in the fridge.
- Meanwhile, combine remaining cornstarch and soy sauce with red pepper flakes and 2 1/2 cups water.
- Cut broccoli into bite-size flowerets and stems into thin slices.
- Heat 1/2 oil in large skillet over high heat. Add pork and stir-fry 2 minutes. Remove from pan and set aside.
- Heat remaining oil in same pan. Add ginger, stir-fry 30 seconds. Add onion and broccoli; stir-fry 4 minutes.
- Stir in pork, tomatoes and soy sauce mixture; cook, stirring, until sauce boils and thickens.
- Serve over rice.
