Butter Tart Squares
Ingredients:
Crust:
2 cups all purpose flour
4 tablespoons brown sugar
1 cup of butter
Topping:
4 eggs, beaten
3 cups brown sugar
1 cup rolled oats
1/4 teaspoon salt
1 teaspoon baking powder
1 teaspoon vanilla extract
1 cup of raisins
½ cup flaked coconut
Directions:
1. Put the flour and 4 tablespoons brown sugar in a large bowl.
2. Cut in the butter with a pastry cutter until it resembles coarse crumbs
3. Press into a 9x13 inch pan lined with parchment and sprayed and bake 25 minutes.
4. In a separate bowl mix together eggs, 3 cups brown sugar, oats, salt, baking powder, vanilla and coconut.
5. Pour the mixture over the par baked crust and continue to bake for an additional 25 minutes.
