Cauliflower Cheddar Soup
Ingredients:
2 cups of peeled and diced potato
2 cups of cauliflower pieces
1 cup peeled and chopped carrot 1 tsp minced garlic
1 cup rough cut onion
1 ½ tsp of salt
4 cups water
1 additional cup of cauliflower pieces blanched
2 cups grated old orange cheddar
1 tsp dried parsley
pepper to taste
Method:
1. Put all of the ingredients except for the cheese, 1 cup of cauliflower, and parsley into a large pot, bring to a boil and reduce and simmer for 20 minutes.
2. Blanch the cup of cauliflower and refresh under cold running water.
3. Let the soup cool for at least 10 minutes.
4. Puree in a blender until smooth.
5. Transfer to a large bowl and whisk in the cheese and parsley.
6. Stir in the blanched cauliflower.
